Preparation for the 58th annual butter sculpture is in high gear at the Great New York State Fair. This iconic display remains a centerpiece of the Dairy Product Building, where visitors often gather to enjoy fresh, cold milk while viewing the work.
Sculptor duo Marie Pelton and Jim Victor are currently operating under a tight deadline to complete the project before the August 25 unveiling. The process involves nearly 800 pounds of unsalted butter that must be carefully applied to welded armatures, which serve as the internal skeleton for the final design.
Creating these sculptures requires more than artistic vision. The team must maintain precise environmental conditions within their workspace. The temperature is kept cold, and the butter must reach a specific consistency, as it needs to remain pliable enough to sculpt but firm enough to hold its form for the duration of the 13-day fair.
The artists often spend days simply moving the medium to reach a stage where detailed carving is possible. Both Pelton and Victor prioritize efficient time management as they shape the butter. Despite the visible progress, the final subject remains a closely guarded secret until the fair begins.
